Clarice is the most sane insane person anyone is likely to meet. She had a very unstable and occasionally traumatic childhood which I can expand on if you're unfamiliar with the canon. Because of the unstable nature of her childhood, at an early age Clarice began doing everything she could to control what she was able to. She isn't obsessive-compulsive, per se, but she does like things orderly, and to be in control. When control is taken from her, she can become twitchy, desperate and occasionally violent. When things honestly bother her, she'll often indulge in mindless, repetitive motions (Like cleaning her gun over and over) to keep herself under control.
Most of the time, she's calm and in control. But there's a heap of crazy just lurking under the surface, and that's without the fact that she is canonically infatuated and possibly in love with a serial killer. The easiest way to get to her is to start talking about Lecter, because that is Something We Do Not Discuss, Children.
